Cucumber Salmon And Avocado Rolls

  • Shredded smoked salmon
  • 1 cucumber
  • 1 avocado
  • 1 table spoon coconut oil (melted)
  • Juice of 1 lime
  • Salt and pepper to taste

  • Peel the skin from the cucumber using a potato peeler and throw away
  • Using the peeler, peel long thick strips off the cucumber lengthways (stick to the outside of the cucumber as towards the middle is too soft)
  • Roll each slice into a tight circle
  • Peel the avocado and slice into small tight cubes, wrap with a piece of shredded salmon and place one cube into the centre of each cucumber roll
  • Once all rolls are complete drizzle with olive oil, lime juice and salt and pepper
  • Makes 15 (Serves 2)
