No Bake Chocolate Brownies




  • Brownie layer: 
  • 1 1/2 cups pitted medjool dates
  • 1 cup ½ cups walnuts 
  • ¼ cup cocoa powder
  • Raspberry layer: 
  • 3 cups raspberries 
  • 2 tbsp chia seeds
  • 3 tbsp honey 

  • ¼ cup Protein World coconut oil
  • ¼ cup cocoa powder 
  • 2 tbsp honey

  • Line an 8x8 inch pan with parchment paper. 
  • In a food processor, pulse dates, walnuts and cocoa powder until it forms a dough. Press evenly in the bottom of the pan and place in the fridge.
  • In a pot, cook raspberries on medium heat until broken down, about 5 minutes. Add chia seeds and honey and cook for another 5-10 minutes on medium-low heat until thick. Let cool, then pour into the pan and spread evenly. 
  • In a small saucepan, heat coconut oil, cocoa powder, and honey on medium heat until combined. Pour into the pan moving the pan around different angles so the chocolate topping spreads evenly.
  • Let firm up in the fridge for 2-4 hours. 
  • Cut into squares and serve.
